5. French

Tokyo is such a cultivated city ... one can enjoy great French fare there. I have tried the 3* L'Osier ... a stylish and dramatic room in the Shiseido building. They serve modern French (quite elaborate compositions) and I thought the meal I had was at the 3* level.

Restaurants:

Please see below for a number of restaurants in the North of Spain that I have heard goodthings about, from opinion I trust - these are all restaurants focused on high qualityingredients, simply (but perfectly) cooked / served.- Elkano - for turbot (restauranteelkano.com)- D'Berto - for seafood (https://www.dberto.com/es/mariscos-pescados.aspx)- Casa Julián - for steak (https://casajulianmg.com/)- Etxebarri - for master grilling (https://www.asadoretxebarri.com/)

With regards to avant-garde / modern cooking, I have been to a few - a number of yearsback I really enjoyed a meal at 3* Azurmendi (https://azurmendi.restaurant/en/). Of coursewith such cooking and the number of dishes, the meal was a little 'uneven', but I thought thebest dishes were truly great.
